Sweet, Spicy, Cheesy. Crazy Easy & Delicious Baked Brie Pastry.

This recipe is as impressive as it is easy! It looks gorgeous, tastes amazing, and requires minimal effort! We used our homemade Sweet & Spicy Strawberry Ghost Pepper Jam to give it a bit of a kick, but just about any flavor jam will work. Further instructions are below, but this 11-second video sums up the entire process. Seriously, it's that easy.

INGREDIENTS:

  • Puff Pastry

  • 5-7oz Brie

  • Favorite Jam. We used our homemade Strawberry Ghost Pepper Jam to give it a kick. You can also use regular strawberry jam and sprinkle a few chili flakes on top. If you don't like spicy, omit the chili and add a subtle sprinkle of thyme. Our other favorite jams to use with this recipe are raspberry, fig, or apricot.

  • 1 egg yolk


STEP 1: Thaw your puff pastry according to package directions. Preheat Oven to 400F and lightly grease a baking tray with a non-stick spray. Once thawed, sprinkle flour over a cutting board and unfold the pastry so that it lays flat.


STEP 2: The pastry will unfold into one sheet with three panels. If the pastry cracks, simply use a touch of water and smush the dough back together. Using a pizza cutter or sharp knife, slice evenly-spaced slits about 3/4 inch thick on the two outer panels; leave the middle section uncut as pictured below. This does not need to be perfect or precise.

STEP 3: Slice the Brie into pieces with even thickness. If using a round wheel of brie, instead of slicing triangles from the middle, cut strips the full length of the wheel: pieces do not have to be symmetrical in length, but aim for consistent thickness. Lay the slices of cheese on the middle panel of the pastry sheet, leaving about half an inch of space from the top and bottom.

STEP 4: Dollop a generous amount of jam over the top of the cheese. Precision is not important, but try to keep it off the slitted side sections.

STEP 5: Fold up the top middle section of dough, then start to "braid" the side slits over the middle. Take the top slit from the right and fold it across the middle, take the top slit from the left and fold it over the first one, then continue all the way down alternating each piece. At the bottom, tuck in the lower portion from the center section and fold over the bottom pieces to make sure the cheese and jam are tucked in.



STEP 6: Beat the egg yolk in a small bowl and using a pastry brush, thinly coat the top of the pastry in the eggwash. If you don't have a pastry brush, you can just use your finger or a folded-up piece of paper towel.

STEP 7: Bake for 30 minutes or until the pastry is golden brown. Remove from the oven and allow it to slightly cool. If cheese has oozed out of the side, that's okay! That's bonus cheese that goes directly to the chef. Using a spatula (or two!), transfer to a serving dish, basque in the admiration of your guests, slice, and enjoy!
